Don't Tell Charles is a contemporary designer cake studio located in Kensington, Victoria. Known for our avant-garde and impactful designs, it's never just cakes for us. We are designers motivated by our love for design in all its forms including architecture, interiors, fine art, food and fashion. Our work aims to not only embody exceptional quality in taste, design and execution but to also push the boundaries between where one design field ends and another begins.
Each DTC cake is baked in-house from scratch using only high quality ingredients. Once layered and filled, every cake is then covered in either Couverture chocolate ganache or our signature soft & silky DTC buttercream. While it may be the striking designs and sharp edges that grab you from the beginning, it is always the exquisite taste and flavour combinations that will keep you coming back for more.
Established in 2013 as a specialty coffee and dessert house, DTC has grown into an industry leading cake studio influencing design trends and cake decorating techniques in Australia and all over the world. We are home to the original Concrete Cake, a design which is rapidly gaining popularity due to its unique and striking simplicity. So popular that we are now holding regular sold-out Concrete Cake workshops in our Melbourne studio, interstate and overseas.
Most workshops at our Melbourne studio are held by our Founder and Cake Wizard, Thao Pham with occasional workshops held by guest instructors from all over Australia. Thao also runs private one-on-one workshops and travels overseas to teach our signature techniques including the Concrete Cakes, Smooth Buttercream, Watercolour Buttercream, Black Ganache etc.
